The chef.Mario Loris is also known as l'Orco [the Ogre], a nickname given to him by friends and relatives... because of his docile character of course!! And while he may be a bit overbearing to meet, he's remarkably pedantic in the kitchen. A familiar morning visitor to the Rialto fish market, no-one dares offer him anything but the freshest fish (if they do "you can hear him "sigar" [shout] all the way to San Marco").
